8 Days of Cookies

Christmas season and treats often times encompass more than just cookies. Gifts for neighbors sometimes encompass candy, quick breads or gourmet pretzels. In this post, I am going to share with you a divine toffee that is a perfect Christmas gift to give out to neighbors. Not only does it look elegant, but it is so easy to make! In this recipe I used peanuts, but really any nut could be used – almonds, walnuts, pistachios, etc.

Peanut Toffee

Ingredients:

  • 1 cup butter, unsalted
  • 1 cup sugar
  • 1 Tbsp vanilla extract
  • 1 1/2 cups roasted, salted peanuts
  1. No oven needed for this, just your stovetop! Line a rimmed baking sheet with a silicone baking mat. Sprinkle peanuts all over mat.
  2. Over medium heat in a medium saucepan, combine butter, sugar and vanilla, stirring constantly until mixture reaches a honey colored brown. This should take roughly 15 minutes.
  3. Remove from stove and pour into prepared baking sheet. Allow to cool roughly 2 hours. Break apart into pieces.
